Originally from my friend Katie, I fell in love with how good it was the first time I had it! I have made it many times since, and over time I have warped it into a similar, and let's be honest, overall unhealthier version!
1. First things first, pop your chicken strips into the oven!
I buy Tyson chicken strips in the frozen section of the grocery store, and make those according to the instructions on the bag!
2. While your chicken strips are cooking mix up your sauce and make your rice!
I buy the 90 second microwaveable white rice bags, but you can make your preferred rice! I have found that the long grain white rice is my favorite for this meal!
The sauce includes:
- 2 parts orange marmalade
- 1 part BBQ sauce
- then add in a tablespoon or two of soy sauce
For the orange marmalade, you have to get the smuckers brand sweet orange marmalade. There is truly nothing better, believe me! For the BBQ sauce I recommend something pretty spicy to balance out the fruity flavor of the orange. I bought this one and really like it, however, I have no specific recommendation. It is solely based on your preference!
Add rice to a bowl and once the chicken is done, cut it into bite sized pieces and drop them individually into your bowl of sauce to make sure each piece gets good and coated.
Scoop out your chicken pieces and put them on top of the rice, pouring any excess sauce over the bowl.
Then enjoy!
This whole process takes less than 5 minutes once the chicken is cooked! Such an easy recipe, easily adaptable for individual meals or groups, and SO tasty! It has become one of my favorite meals, and I hope you enjoy!
