With all of this time on our hands with quarantining, not wanting to sit around all day, I feel like many of us are looking for new recipes to try out! This earl grey yogurt cake recipe by Molly Baz that I found through an instagram recommendation, was so delicious and I wanted to share the recipe with you all so you can make it for yourself if you are looking for something new to try!
Ingredients you need include:
Dry Ingredients -
2 cups (250 g) all-purpose flour
1½ tsp. Diamond Crystal or 1 tsp. Morton kosher salt
½ tsp. baking powder
½ tsp. baking soda
1¼ cups granulated sugar
3 Tbsp. loose-leaf Earl Grey tea or ¼ cup tea leaves from bags
1 Tbsp. raw or granulated sugar
Wet Ingredients -
2 large eggs
1 cup vegetable oil
1 cup plain whole-milk yogurt
2 tsp. vanilla extract
Equipment you need: 9x5 loaf pan, mixing bowls (i used 2), whisk, spatula, measuring cups, and parchment paper.
Begin by preheating your oven to 325° and coat your 9x5" loaf pan with cooking spray or the oil you are using in the recipe, and then line with parchment paper, leaving overhang on the sides. Set aside for after you have the ingredients mixed!
Whisk together 2 cups all-purpose flour,1tsp. Morton kosher salt, ½ tsp. baking powder, and ½ tsp. baking soda in your dry ingredient bowl.
Now it is time to mix your wet ingredients! Whisk 2 eggs and1¼ cups granulated sugar in your wet ingredient bowl for 1 minute.
This wet ingredient mixture should be pale yellow and frothy looking, as seen in the photo. Add in 1 cup plain whole-milk yogurt, 3 Tbsp. loose-leaf Earl Grey tea or ¼ cup tea leaves from bags, and 2 tsp. vanilla extract and whisk together.
Gradually add your 1 cup vegetable oil, whisking constantly while incorporated. A trick I found on the internet is to place a kitchen towel under my mixing bowl while whisking so that the bowl did not spin as I stirred. Which I recommend doing, so you are able to use both of your hands to mix/pour.
Now is the time to add your dry ingredients and wet ingredients together and whisk to combine. When combined it should have this consistency as pictured.
Scrape your batter with your rubber spatula at this time into the prepared pan from the beginning, smoothing it off and tapping the pan to eliminate any air bubbles. Then sprinkle your 1 tbsp. of granulated sugar onto the top! This sugar will give the top of the cake a crisper, sweet texture and taste.
Then place the cake in the oven for about an hour, or until you can insert a toothpick in the middle of it and it comes out clean.
After you take the the cake out of the oven, place the cake pan and all onto a cooling rack and let it sit for 15 minutes to cool a bit, and then lift it out of the pan by the parchment paper handles you made by over-measuring the pan lining.
Once the cake it completely cooled, you are ready to enjoy! I sliced mine and ate it as is, and it was a big hit! I originally served it as a dessert, but also liked it as a breakfast, as it paired exceptionally well with a cup of coffee or a glass of milk. Overall it is a very dense and moist cake, with a tangy and creamy taste likely due to the yogurt added into the batter. It was absolutely amazing. It tasted like a london fog latte but in food form, and I would recommend this delicious recipe to anyone wanting to try it out!
