Cauliflower "Chicken" Wings


Do not be mistaken, what you are looking at right here is not chicken. It's cauliflower. These things were honestly pretty dang good!


Now before I start, I want to disclose that the cauliflower wings were not super crispy. I think that either adding less batter to the cauliflower pieces or increasing the heat they are cooked/broiling them would fix that! I will tell ya how I made them, but keep that in mind! I will redo this post when I figure out how to make them crispier!



 

Ingredients:

  • 1 head cauliflower (4 cups when pulled apart into chunks)

  • 1/2 cup water

  • 1/2 cup milk

  • 1 cup all-purpose flour

  • 2 tsp garlic powder

  • 2 tsp cayenne pepper

  • 1/4 tsp salt

  • 1/4 tsp ground pepper

  • 1 cup Frank's red (or any) hot sauce

  • 1 tbsp butter

Supplies:

  • baking sheet

  • parchment paper

  • oven

  • microwave safe bowl OR stove safe pan

  • mixing bowl (preferably large, for batter)

  • microwave or stove

 

1. Cut your head of cauliflower into chunks. We did our's in pieces that were 1-2 bites in size, but you can make them your own preferred size! Basically just make them how big you would want your chicken wings to be.


2. Mix up your batter!

  • 1/2 cup water

  • 1/2 cup milk

  • 1 cup all purpose flour

  • 2 tsp garlic powder

  • 2 tsp cayenne pepper

  • 1/4 tsp salt

  • 1/4 tsp pepper

Combine all above ingredients in a large mixing bowl and whisk together to make the batter to coat your cauliflower pieces!

3. Line your baking sheet with your parchment paper like you see in the picture! Trust me, the sauces get sticky and this will be a lifesaver for when you are washing dishes.


4. Preheat the oven to 400-425º. Maybe lean toward the 425º mark, as I did 400º and I think a little more heat would have made them crispier on the outside.


5. Dump your cauliflower pieces into your batter! Now I think I added a little too much batter to my cauliflower pieces perhaps, so make sure you wipe off any excess, and that might make them crispier!


6. Pop this pan into your oven for 20 minutes, flipping them over at the 10 minute mark to make sure both sides get good and cooked & crispy.


7. During those 20 minutes, combine your 1 cup Frank's (or any) hot sauce with your 1 tbsp butter and heat on the stove, or melt in the microwave. This will get it ready to coat all of your cauliflower pieces. We substituted BBQ sauce for a handful of the wings to try it out, and although it was still tasty, buffalo stole the show for sure!


8. Dunk your cooked & batter-coated cauliflower in your sauce! We dunked them all in and laid them back on the same parchment paper-lined pan, and then drizzled the excess sauce over the top of them.


9. Pop the sauce covered wings back into the oven for another 15-25 minutes or until they are as crispy as you prefer. We did about 25 minutes, checking on them every 5 or so minutes to make sure they were not burning.

10. Top with ranch or blue cheese or whatever you prefer, and enjoy!


I hope you try out these cauliflower wings, and hope they become a tasty treat for you like they were for my family!


Although they were not as crispy as actual chicken wings, they were still very well liked by the fam! I will definitely be making these again!
